Cottage Cheese Chips (Crispy, Easy & High-Protein!)

I threw these together one night when all I had was cottage cheese and a snack craving. No joke—these cottage cheese chips turned out insanely crispy and satisfying. Now, I make them weekly. They’re high-protein, low-carb, and totally addictive.

Why You’ll Love These Cottage Cheese Chips

  • Just one ingredient needed
  • Keto and low-carb friendly
  • Packed with protein—2g per chip!
  • Crispy and cheesy with real crunch

I love munching these during late-night editing. They feel indulgent but aren’t.

When I First Tried This Snack

The first time I made these, I was deep in a cleaning frenzy—music loud, cheese on parchment, totally winging it. I forgot them in the oven… and they turned out amazing. Now I always keep a tub on hand. Even my non-keto husband sneaks a few when I’m not looking.

Description

Crispy, high-protein chips made from just one ingredient—whole milk cottage cheese. Easy, keto-friendly, and endlessly snackable.

Ingredients

Scale

1 cup whole milk cottage cheese (4% milkfat, 14g protein per 1/2 cup)

Optional toppings: everything bagel seasoning, garlic powder, chili flakes, shredded cheddar or parmesan, fresh rosemary

Instructions

1. Preheat oven to 350°F (177°C). Line a baking sheet with parchment paper.

2. Scoop cottage cheese onto parchment using a 1 tbsp cookie scoop.

3. Flatten each mound gently with the back of a spoon to 3/16–1/4 inch thick.

4. Sprinkle optional seasonings on top.

5. Bake for 40–50 minutes until edges are deep golden and centers are set.

6. Remove from oven and let chips cool for 20–30 minutes to crisp up fully.

7. Enjoy fresh, or store leftovers in an airtight container in the fridge or freezer.

8. Re-crisp in the oven for 5–8 minutes if needed.

Notes

Do not use fat-free cottage cheese—full-fat crisps better.

Use Reynolds or Kirkland parchment to prevent sticking.

Only bake small batches at a time for the best texture.

I use Good Culture or Daisy. Avoid fat-free—it doesn’t crisp well.

Preheat oven to 350°F.
Line a tray with parchment—Reynolds or Kirkland are best (no sticking!).

Step 2 – Scoop & Shape

Scoop 1 tbsp dollops.
Flatten with a spoon to ¼ inch thick.
Don’t over-flatten—too thin chips break.

Step 3 – Bake Slowly

Bake 40–50 minutes.
Edges should be deep golden.
Let cool 20–30 minutes. They crisp as they rest.

Flavor Variations You Can Try

Change it up before baking:

  • Chili powder + lime zest
  • Garlic + onion powder
  • Parmesan or cheddar
  • Rosemary or Italian herbs
  • Everything bagel spice

I love a garlic-parm mix—tastes like pizza chips.

Tips for Perfect Chips

  • Use full-fat, high-protein cottage cheese
  • Spread evenly, not too thin
  • Cool completely before eating
  • For max crunch, broil 2–3 mins at the end

They store best short-term. I often snack on them while writing up chocolate strawberry yogurt clusters.
