Description

Juicy garlic chicken with broccoli and spinach—quick, healthy, and packed with flavor. A one-pan wonder for busy weeknights.


Ingredients

2 boneless, skinless chicken breasts (1 lb), cut into bite-sized pieces

2 tablespoons olive oil, divided

4 cloves garlic, minced

2 cups broccoli florets

3 cups fresh spinach leaves

½ teaspoon salt (adjust to taste)

¼ teaspoon black pepper

½ teaspoon red pepper flakes (optional)

¼ cup chicken broth or water

1 tablespoon fresh lemon juice

¼ cup grated Parmesan cheese (optional for garnish)


Instructions

1. Cut the chicken into bite-sized pieces and season with salt and pepper.

2. Heat 1 tbsp olive oil in a large skillet over medium-high heat. Cook the chicken until golden and cooked through (6–8 minutes). Remove and set aside.

3. In the same skillet, heat remaining olive oil. Sauté broccoli for 3–4 minutes until crisp-tender.

4. Add garlic and spinach, stirring until spinach wilts and garlic is fragrant (about 2 minutes).

5. Return chicken to skillet, pour in broth, and simmer for 2–3 minutes to combine flavors.

6. Finish with lemon juice and optional Parmesan. Adjust seasoning to taste.

7. Serve hot over cauliflower rice, regular rice, or pasta as desired.


Notes

Swap broccoli with green beans or asparagus if preferred.

For a dairy-free version, skip the Parmesan.

Add hot sauce or jalapeños for extra heat.

Leftovers keep well in the fridge for 3 days or freezer for 2 months.

Reheat gently with a splash of broth to prevent drying out.
