Description
Juicy, buttery garlic steak bites paired with crispy golden potatoes. A quick, one-pan dinner ready in just 30 minutes and packed with comfort and flavor.
Ingredients
1¼ lb sirloin steak, cut into ½ inch cubes
3 garlic cloves, minced
¼ cup ghee or butter, divided
1 tablespoon olive oil
1 lb Yukon gold potatoes, cut into ½ inch cubes
1 teaspoon dried thyme
½ teaspoon dried oregano
½ teaspoon sea salt
¼ teaspoon ground black pepper
Fresh parsley for garnish
Instructions
1. Heat cast iron skillet over medium heat. Add olive oil and 2 tbsp ghee.
2. Add potatoes, garlic, thyme, oregano, salt, and pepper. Cook 8–10 mins until golden, stirring every 1–2 mins.
3. Remove potatoes and set aside.
4. Increase heat to medium-high. Add remaining 2 tbsp ghee.
5. Add steak bites in a single layer. Season with salt and pepper.
6. Sear for 2 minutes. Stir, then cook 1–2 more minutes until browned.
7. Return potatoes to pan. Stir to combine.
8. Adjust seasoning as needed. Garnish with parsley. Serve hot.
Notes
Use ribeye or tenderloin for even juicier steak bites.
Try red potatoes or fingerlings if you prefer.
Add chili flakes for heat or rosemary for a flavor twist.
Reheat leftovers in a skillet for best texture.
