Description

Whip up these hassle-free vegan protein bars with no oven required — ideal for a nutritious snack on the go or a quick energy boost straight from the freezer.


Ingredients

1½ cups gluten-free oats, finely ground

½ cup plain vegan protein powder

½ cup crispy rice cereal

¼½ teaspoon sea salt

½ cup natural peanut, almond, or sunflower butter

½ cup maple syrup (or another liquid sweetener)

1 teaspoon vanilla extract

3 tablespoons mini dark chocolate chips

½ tablespoon coconut oil


Instructions

1. Line an 8×8 inch pan with parchment paper.

2. Combine oat flour, protein powder, rice cereal, and salt in a large bowl.

3. Mix in nut or seed butter, syrup, and vanilla until fully combined.

4. Add a splash of plant milk if mixture is too crumbly.

5. Press the mixture firmly into the prepared pan and smooth it out.

6. Place pan in freezer for 5–10 minutes.

7. Gently melt chocolate chips and coconut oil over low heat, stirring to combine.

8. Cut chilled mixture into bars and drizzle with melted chocolate.

9. Return bars to freezer to set the topping.

10. Store in the freezer in an airtight container for optimal freshness.
