This Crock Pot Cheesy Chicken Spaghetti is creamy, rich, and made with simple pantry ingredients. It’s the ultimate comfort food for busy nights.
Ingredients
2 lbs boneless skinless chicken breasts
10 oz can diced tomatoes with green chilies
1 can cream of chicken soup
1 can cream of mushroom soup
½ diced onion
2 tsp minced garlic
2 tsp Italian seasoning
4 oz cream cheese, diced
2 cups shredded cheddar cheese
16 oz spaghetti, cooked separately
Instructions
1. Add chicken, tomatoes, soups, onion, garlic, and seasoning to Crock Pot.
2. Cook on low for 6–8 hours or high for 3–4 hours.
3. Shred chicken using forks or a hand mixer.
4. Add cream cheese and cheddar cheese; stir until melted.
5. Cook spaghetti separately and stir into the cheesy chicken mixture.
6. Serve warm and enjoy.
Notes
Prep spaghetti the night before to save time.
Use Velveeta or Monterey Jack for cheese variation.
Rotisserie chicken works great to speed things up.
Leftovers store well for up to 4 days and freeze beautifully.
