Description

Crispy, high-protein chips made from just one ingredient—whole milk cottage cheese. Easy, keto-friendly, and endlessly snackable.


Ingredients

1 cup whole milk cottage cheese (4% milkfat, 14g protein per 1/2 cup)

Optional toppings: everything bagel seasoning, garlic powder, chili flakes, shredded cheddar or parmesan, fresh rosemary


Instructions

1. Preheat oven to 350°F (177°C). Line a baking sheet with parchment paper.

2. Scoop cottage cheese onto parchment using a 1 tbsp cookie scoop.

3. Flatten each mound gently with the back of a spoon to 3/16–1/4 inch thick.

4. Sprinkle optional seasonings on top.

5. Bake for 40–50 minutes until edges are deep golden and centers are set.

6. Remove from oven and let chips cool for 20–30 minutes to crisp up fully.

7. Enjoy fresh, or store leftovers in an airtight container in the fridge or freezer.

8. Re-crisp in the oven for 5–8 minutes if needed.


Notes

Do not use fat-free cottage cheese—full-fat crisps better.

Use Reynolds or Kirkland parchment to prevent sticking.

Only bake small batches at a time for the best texture.
